A 700 year old recipe
The 'Escalette of Montpelleier' is an old-fashioned wafer-like biscuit that has been around since the Middle Ages.
These treats were called 'Oublies' (forgotten things) in old French society, because they are so light, that just after eating them, the taste disappears immediately.
They were usually eaten during the carnival, in the heart of winter.

The "Languedocienne waffle"
The Escalette is a tasty, delicately flavored wafer, with an atypical aesthetic, baked in cast iron molds.
In the Occitan language, "Escaleta" means 'dry waffle'.
“I bought some 'Escalettes de Montpellier' in Palavas. At that time I didn't realize that it was such an ancient, traditional recipe from this region. It was just a treat to be able to taste handmade biscuits from the area.”
